Chocolate Fudge Cake - What Katie Ate

Yield: 1 9-inch cake

For the Cake:

1 1/4 cup self-rising flour, sifted
1/2 cup caster sugar
1/2 cup brown sugar
4 tablespoons melted unsalted butter
1/2 cup good quality cocoa powder
1 teaspoon vanilla extract
1 large tablespoon blackberry jam (sieved and pips removed)
3 eggs

For the Frosting:

6 oz (170g) good quality 70% chocolate
1 1/4 cup unsalted butter
1 teaspoon vanilla extract
1/2 tablespoon instant coffee

In a bowl, combine the cocoa, sugar, flour, vanilla, melted butter and jam. Add the eggs then mix until batter is smooth. Place mixture into a round greased baking pan (9″) and bake in a 325 degrees F (160 degrees C) oven for 30 minutes or until cake is cooked, remove from oven. After 10 minutes turn the cake out onto a wire rack and allow to cool. When cake is cooled, slice in 1/2 horizontally to make 2 layers. If you want 3 layers, double the above mixture, divide into 3 pans and cook each layer separately.

In a bowl beat the butter and the caster sugar until smooth and creamy. In a separate bowl melt the chocolate over a pan of lightly simmering water, ensure that you do not boil the water.

Add the vanilla and coffee to the melted chocolate mixing together, it will start to go lumpy don’t worry just add this to the butter and caster sugar mixture beating it gently until glossy and smooth. You can double this recipe to get extra frosting.

Use a spatula to decorate the cake, spreading frosting in between layers and around the cake.

    All of your recipes are wonderful! I am gluten intolerant so i have to make some small substitutions, but they taste just as great.
