Bourbon Basted Salmon

This is an AMAZING recipe. Quick easy marinade that is short on effort and long on taste. For best results marinate the fish overnight. This recipe will accommodate up to 1.5 lbs of salmon. Reduce or increase proportions as needed. If you don’t have scallions readily available, you can substitute about 3 generous shakes of dried onion flakes. This recipe is also good on chicken.

Bourbon Basted Salmon

1/4 cup packed brown sugar
3 tablespoons Bourbon whiskey
3 tablespoons chopped scallions
2 tablespoons soy sauce
2 tablespoons vegetable oil

Whisk together all ingredients in a bowl until sugar is dissolved. Pour over fish. Refrigerate marinating container up to 24 hours, rotating the dish a couple of time to fully coat fish. For best results marinate overnight.
